Kidney Friendly Recipes

Your diet is one of the most challenging parts of having chronic kidney disease (CKD) or end stage renal disease (ESRD). When you or a loved one has kidney disease you can eat healthy and delicious meals. Making food that tastes good adds to the quality of your life and can lift a weary heart.

Knowing what to look for in food will help to maintain a healthy life. When on dialysis, several things need to be kept in mind when selecting the food. Your dietician can help you will different recipes.

Stuffed Strawberries

Ingredients:

  • 24 large strawberries
  • ½ cup strawberry flavored cream cheese
  • 3 Tablespoons reduced fat sour cream

Preparation:

Rinse strawberries and cut stem end off flat. Make a deep X in the tip of strawberry spread x open and spoon in cream cheese sour cream mixture. Plate strawberries and serve.

Cranberry Chicken

Ingredients:

  • 1 tablespoon olive oil
  • ¼ cup onion diced
  • 2 pounds boneless, skinless, chicken breasts
  • ¼ cup ketchup
  • 1 teaspoon dry mustard
  • 16 ounces canned whole berry cranberry sauce
  • ¼ cup brown sugar
  • 1 tablespoon apple cider vinegar

Preparation:

Preheat oil in skillet and sauté onion until clear. Add chicken and cook for 3-4 minutes on each side. In a medium bowl combine ketchup, dry mustard, cranberry sauce, brown sugar and vinegar. Stir mixture and pour over skillet items. Cover and cook 15 minutes. Serve.

Stir Fry Veggies

Ingredients:

  • ½cup cauliflower diced
  • ½ cup broccoli diced
  • ½ cup carrots shredded
  • 1 cup sugar snap peas
  • ½ medium onion diced
  • 1 zucchini diced
  • 1 yellow squash diced
  • (Add diced red and green pepper if you like those veggies)
  • 1 tablespoon coconut oil
  • 1 clove crushed garlic
  • Salt and pepper to taste

Preparation:

Heat a medium to large skillet on medium high and sauté garlic and onions in coconut oil for 1 minute and add all of the veggies. Sauté until veggies are just tender, salt and pepper to taste and serve.
